I've done lots of craft fairs, and this is the method I used...
I got 40 large and 40 small pizza boxes (new, from our local pizza place- he sold them to me for around a quarter each) and I folded them with the pizza logo on the inside (so that they would look professional from the outside.
They stack so nicely, and you can label the front and easily find what you're looking for. I still use them to store premades.
To transport them, I would stack 15-20 of them, secure them together (I used adjustable straps that dh had in the garage) and then loaded them onto my little pushcart and off I went.
Once I was set up for the craft fair, I would store the boxes under cloth-covered tables, so that if I ran out of any particular item I could get more from the boxes.
