Default Question About Taking Pictures In the Bright Sunlight...

I'm trying to take some good quality pictures, but am struggling with taking the in the bright sunlight. When taking them outside on our back deck, the pictures are nice and bright, but it's almost impossible to keep my shadow out of the picture. I have to take them from one angle in order to not have the shadow of my arm, camera, etc. in the picture. Also, sometimes they look too bright. Does anyone have any recommendations for taking good quality pics outside? I tried taking them in the shade, but then they're not bright enough... so frustrating! I have the very basic Photoshop and have tried to brighten up the ones that were taken in the shade, but they're still not bright enough and end up looking funny. Any help would be great! Thanks soooooooo much!
